A recipe for meal prepping chicken thighs with sautéed bell peppers in a lemon-tomato sauce, served with rice. Designed to be cheap and easy for college meals.
1. Use as many Chicken Thighs as you want (the recipe used 6). Dry them very thoroughly and let them get to room temperature.
2. Add Olive Oil, Salt, Pepper, and any other seasonings you want (Garlic Seasoning was used in the example).
3. Bake the chicken thighs at 425°F (218°C) for 35-40 minutes.
4. While the chicken bakes, cut Bell Peppers (as shown in the video) and chop up some Parsley.
5. Once the Chicken is cooked, remove it and use all the juices from the pan by pouring them into a separate pan.
6. Turn the heat on to Medium and once it is hot enough, add the cut Bell Peppers.
7. Cook the bell peppers for a bit until softened, then add your favorite Tomato Sauce.
8. Add Salt and Pepper to taste.
9. Grate Lemon Zest and add it to the sauce.
10. Add the juice from the whole Lemon to the sauce.
11. Cook some Rice on the side according to package directions.
12. Add a portion of Rice, Chicken, and Sauce to 5 different meal prep boxes ($1.53 per serving). Have it right now or save it for later.
